I am a huge sucker for anything sugary and sweet, I just LOVEEEE it! But unfortunately my skin doesn’t love it that much. Ever since I noticed that my skin cleared up a lot after eating less sugar, I try to replace store bought sugary snacks with my home made sugar free ones (or at least with less sugar in them). I’m not completely on a sugar free diet, it’s just that I’m trying to downgrade my sugar intake.
One recipe I recently discovered is this one by Sue Quinn from her cookbook Sugar Free that I’d like to share with you.
What you will need:
- 300 grams of blueberries
- 100 grams of rye flour (I used oat flour)
- 100 grams of flour
- half a teaspoon of baking powder
- half a teaspoon of baking soda
- 200 ml milk
- 2 eggs
- 50 grams of butter, melted
- 1 teaspoon vanilla extract
- 120 grams of greek yogurt
- oil for greasing the waffle iron
- a waffle iron
Let’s do this:
Put 200 grams of the blueberries in a blender and turn it into a sauce. Mix the flour and rye (or oat) flour, baking powder and baking soda together in a bowl. Add the milk, butter, vanilla extract and yogurt and mix until it forms a nice batter. Carefully add the rest of the blueberries to the batter. Heat up your waffle iron and grease it with oil once it’s at the right temperature. Scoop the batter in your waffle iron and bake them according to the instructions of your iron (mine took about 5-6 minutes). Let the waffles cool down and serve them with the sauce and some greek yogurt if you like (I also really enjoyed dusting them with powdered sugar, although that doesn’t make them sugar free anymore).
