3x Summer Breakfast

Breakfast is definitely my favourite meal of the day during summer, especially when I don’t have to go anywhere so I can take some extra time to make something special. On hot summer days I like to incorporate fresh fruits into my breakfast. They are sweet and fresh, perfect to start my day with. Yoghurt is also one of my go-to breakfast options, it is nice and cool and it goes very well with fruit. I wanted to share three of my favourite breakfast ideas for this summer with you. They are all quick and easy to prepare!

Home made granola  with apple and vanilla yoghurt

What you will need for the granola:

  • 300 grams of oat flakes
  • 6 tbs of honey
  • 4 tbs of apple juice
  • 2 hands full of unsalted chopped nuts (I used almonds, hazelnuts and pecans)
  • a dash of salt
  • a hand full of dried cranberries
  • a hand full of raisins
  • greaseproof paper


Preheat the oven at 150 degrees celsius. Pour the honey and apple juice into a large bowl and stir until well mixed. Add the oat flakes, chopped nuts and salt and mix it. Place some greaseproof paper on a baking sheet and spread the mixture on top of the paper. Bake the granola for 10-15 minutes, then take it out of the oven and mix it for a bit to ‘break’ up in crumbles. Then bake it for another 10-15 minutes. Let the granola cool down completely and add the cranberries and raisins.

You can make the granola the day before you want to use it and keep it in a closed box or jar. Pour some vanilla yoghurt (or any other yoghurt you like) into a bowl and add the granola. Chop up an apple and place it on top, and voila! Breakfast is ready.

Forest fruits smoothie


What you will need (for about 3 glasses):

  • 200 ml of yoghurt
  • 100 ml of milk
  • 250 grams of forest fruits (I used strawberries, blueberries, raspberries, cranberries, blackberries and cherries)
  • a handful of mint leaves
  • a blender


This one is easy! Put everything into your blender untill well mixed. Pour it into glasses when it is ready.

Toast with mascarpone and forest fruits



What you will need:

  • bread
  • mascarpone
  • 200 grams of forest fruits
  • about 5 large fresh strawberries
  • 2 teaspoons of sugar


Put the forest fruits with the strawberries into a bowl and ‘mash’ it up slightly with a fork. Add two teaspoons of sugar and stir it for a bit. Then leave it for about 20 minutes so the sugar can be absorbed. Toast your slices of bread and spread some mascarpone on top of it. Add the fruit mixture on top of that and enjoy!
